Lemon Herb Chicken
4 Boneless Skinless Chicken Breasts
1 can of low sodium chicken broth
1 small to medium lemon
1/2 tsp oregano
1/2 tsp basil
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp black pepper
dash of salt
Trim breasts to remove and fat.
In a large ziplock bag: Add the chicken broth. Slice the lemon in half and squeeze both halves of the lemon into the bag. Discard the squeezed lemon. Add the remaining ingredients. Zip the bag and shake to mix the ingredients.
Add the chicken and refigerate for at least 1 hour to marinate.
Preheat over to 400 degrees.
Add entire contents of bag to a roasting pan and cook until chicken is cooked through, approx 30 to 35 minutes (note, if breasts are very large you may want to halve them before marinating)
Chicken will be very moist and leftovers make wonderful sandwiches.

BBQ Glazed Turkey Meatloaf
1 1/4 lbs lean ground turkey
1/3 cup seasoned bread crumbs
1/2 tsp oregano
1/2 tsp onion powder (you could use chopped onions instead)
1 large egg
1/4 tsp salt
1/4 tsp black pepper
Mix all ingredients together.
Now this is slightly different of the site's recipe. They also have 1/4 cups low fat shredded cheese.
Then they have a glaze. Reviews said the meatloaf was a little bland and the glaze was the best part, so I mixed up the glaze and added half the glaze to the meatloaf mix before I put it in the loaf pan. The rest of the glaze I put on after 30 minutes of baking.
Then I baked at 375 degrees for 45 minutes. Probably could have done a few minutes less, but was following recipe
Slowcooker Beef pot roast ( suitable for diabetics)
1.5 KG,( 3lb) boneless piece of beef
2 tablespoons flour
1 tablespoon canola oil
2 large onions, chopped
1/4 cup light soy sauce
1/4 cup water
1/2 teaspoon ground ginger
1 Dip roast in flour and brown on both sides in oil in a saucepan.
2 Place meat in slow cooker and top with onions.
3 Combine soy sauce, water and ginger and pour over the meat.
4 Cover and cook on high for 10 minutes.
5 Reduce heat to low and cook for 8-10 hours.
NB You only need to purchase a cheap piece of beef for this recipe
