I first started a Facebook Group of the same name. What led me to start a Facebook group and write this blog was the ever spiralling food prices. Seriously, I feel we are being rorted by the food chains, however there is little we can do about that. As we all need to eat and to feed our children. We can however, learn to be thrifty and try to become self sufficient, after all our ancestors before us were.

Vegetable Dishes
Add a little meat if desired
Zucchini Bake
2 medium Zucchini grated
2 medium Carrots ( peeled) and grated
1 large chopped Onion
Parsley ( if desired )
5-6 Eggs beaten
1 cup Grated Cheese
1 cup SR Flour
½ cup Oil
Salt & Pepper to taste.
Mix all these ingredients well
Place into a greased dish of choice
Bake in Hot Oven for about 30 minutes or until golden brown.
If desired add 125gm of any chopped meat e.g. Ham
Sweets / Desserts
I call this "The Easy As Sweet" simply because it is
Easy As Sweet ( 3 ingredients)
1 Packet Gingernut biscuits
1 small tin crushed Pineapple
1 cup whipped Cream.
Place into a serving dish, layer of gingernuts, then pineapple, then cream.
Repeat layers until you have used up your ingredients
Chill and Serve
Golden Syrup Dumplings
Cheap and easy especially on a cold day
Ingredients
Dumplings
1 cup self raising flour
pinch of salt
20g butter
1 egg
Method
Sift self raising flour with a pinch of salt into a bowl. Rub in the butter then add the whisked egg and stir to combine and then add the milk slowly till the dough resembles a scone mix. Set aside and make the sauce.
Combine all sauce ingredients into a large frypan with a fitted lid. Bring to the boil to almalgamate and turn down to a simmer.
Meanwhile flour your hands and roll the dough into the size of a 20 cent piece.
Cover a dish with baking paper to put all the dough balls on. Then slip the balls off the baking paper all together into the syrup. Cover with the lid and cook for about 10 minutes, turn over to cook on the other side for another 10 minutes.
Sauce
1 1/2 Cups of golden syrup
1/2 Cup of water
60g butter
Remove with a slotted spoon and serve with the sauce and a jug of runny cream
Lemon Delicious Pudding
I baked this often when I cooked in Aged Care,always a winner
This recipe will feed 4-6
60g butter
grated rind and juice of 1 lemon
2/3 cup sugar
2 eggs, separated
4 tablespoons self-raising flour, sifted
1 1/4 cups milk
Method
Preheat the oven to 180ºC (350ºF). Using an electric mixer, cream the butter with the lemon rind and sugar. When it is creamy and light, beat in the egg yolks. Stir in the sifted floured alternately with the milk.
Beat the egg whites until stiff and fold into the mixture with the lemon juice, lightly yet thoroughly. Pour into a buttered casserole or pie dish and bake for about 45 minutes.

Add entire contents of bag to a roasting pan and cook until chicken is cooked through, approx 30 to 35 minutes (note, if breasts are very large you may want to halve them before marinating)
Chicken will be very moist and leftovers make wonderful sandwiches.

Then I baked at 375 degrees for 45 minutes. Probably could have done a few minutes less, but was following recipe

1.5 KG,( 3lb) boneless piece of beef
2 tablespoons flour
1 tablespoon canola oil
2 large onions, chopped
1/4 cup light soy sauce
1/4 cup water
1/2 teaspoon ground ginger
1 Dip roast in flour and brown on both sides in oil in a saucepan.
2 Place meat in slow cooker and top with onions.
3 Combine soy sauce, water and ginger and pour over the meat.
4 Cover and cook on high for 10 minutes.
5 Reduce heat to low and cook for 8-10 hours.
NB You only need to purchase a cheap piece of beef for this recipe

1 kg carrots
1 tablespoon oil
1 large onion, chopped
4 cups+ vegetable stock or water( I use chicken stock powdered 1 rounded tsp to 1 cup water)
4 Tablespoons Rice ( white or brown) optional
Top and tail the carrots and peel or scrub. Cut them into pieces and set aside. Heat the oil in a large, heavy soup pot over medium heat. Add the onions and saute for a few minutes or until the onions start to get translucent. Add the stock and carrots and rice and bring to a gentle boil. Lower the heat and simmer for 30-45 minutes or until the carrots are tender - But try not to overcook. Remove from heat and cool .
Puree with a hand blender, the soup can be a bit chunky,or completely smooth - Now salt to taste. If you used a salty veggie stock, you might just need a little salt. If you used water, you'll need quite a bit more. Keep adding a few pinches at a time until the carrot flavour really comes out. If it tastes flat or dull, keep adding.
If you like Pumpkin soup you will love this
If you feel it a bit thick, thin with milk or water

I have a recipe book with hand written recipes that is 68 years old and last night was a good time for me to drag it back out I came across this recipe different from the way I have always done it and it sounds scrummy.
Tomato Dish
Line your casserole dish with sliced tomatoes and sprinkle with salt and pepper.
Then place a layer of bread crumbs,
Then a layer of grated cheese
Break in 1 egg per person
Then layer again Tomato,bread crumbs and grated cheese
If desired top with bacon pieces
Bake in a moderate oven approx 30 minutes.
Old fashioned Dumplings
Not something I hear or see much said about these days
Great change from Potatoes and Pasta
Great in stews
As a sweet Golden Syrup Dumpling

3 tsp. baking powder
1/2 tsp. salt
2 tsp. margarine
3/4 cup. milk
Sift the dry ingredients; rub in the margarine lightly with the fingers; add the milk and mix to a soft dough; and form into balls.Place into boiling liquid,or stew, Cover closely; boil 15 minutes.Do not lift the lid.
This is a fantastic and easy recipe
Easy to make , can be eaten hot or cold
For functions for family or friends cut into fingers or small triangles.
Savoury Toasts
Ingredients
I Pack homebrand bacon pieces, I use Black and Gold ( In Australia)
1 large onion finely chopped
1 cup cheddar cheese grated ( more if desired
1 egg, beaten
1 Tbsp Worchestershire sauce
1 Tbsp tomato sauce (ketchup)
12 slices white or brown bread
Method
Place the 12 slices of bread on baking pans or cookie sheets. Mix the remaining ingredients together and spread liberally over each slice of bread. Bake at 160°C (320°F) for 30 minutes, or until bread is toasted and mixture is set. Remove from oven, cut into desired serving size.
Potato Bake
Simply delicious and a big favourite in my family
Will accompany any dish you like
This recipe can be halved for smaller servings
Ingredients
6 large potatoes or 8 medium potatoes
1 pkt French onion soup
5/600 ml cream
Method
Peel and slice potatoes thinly and place layers in greased oven proof dish.
Mix together the cream and French onion soup and pour over potatoes.
Cook in oven 180 for approximately 1-11/2 hours.
Serves 6-8
If you want to get it off to a quicker start cook on high in your microwave about 15 mins, in fact if you were short on time you could continue microwaving until cooked through, although I prefer the brownness in the oven.
I also like adding crushed garlic
